All that juice, etc from cooking the "Coq" - a large 'dollop' of real butter - then some chopped bacon (lardons), small shallots - all sweated together (cover the pan !) - (you can add, carrots, celery, whatever - but not traditional !) then the small mushrooms and the concentrated wine that you have put aside
