Guernsey Parsnips

A slightly unusual photo today ! A "root" from Guernsey - where once I had roots !!!!!!!!!! "Panais de Guernesey" - The French consider them to be the "Creme de la Creme" of Parsnips - bought in my local growers market in Béziers. A variety that is more than 150 years old. It is considered by Guernsey farmers to be the most nutritious root known, superior even to the carrot and the potato. note the unusual shape !
