My lunch today in what is my favourite Restaurant in Les Halles in Béziers - "La Gargote". The literal translation of Gargote is "a low class establishment" !!!
Mont d’Or is an A.O.C. cheese. Made from cow’s milk in the Jura Region in the mountains of Eastern France, It is normally served baked with a generous splash of white wine stirred in. It is marketed in round boxes made of spruce Only made and sold during the Winter months.
Combined with Sausage from the neighbouring Franche-Comté Region which has a specific flavour because of the method of preservation, they are gently smoked in sawdust from the fir trees of the Jura mountains in an enormous wooden pyramid shaped chimney. This natural and generous flavour characterizes this sausage which is a regional culinary delight.
