....... at the local "Café Associatif" next to my house in Béziers. What is Occitan Music ? Music from Occitanie - the country bordering the Mediterranean of what is now France. Absorbed into the northern Kingom of France at the times of the "Cathar Crusade, which started in 1209 with the "sack" of Béziers. .......
and eating !
This was my contribution for the evening. A traditiona recipe from Jersey, another region with an older language than French !
It is called "des pais au fou" - this is my unusual vegetarian version made in a modern version of the original "Croc".
A recipe based on beans, traditionally cooked in a very slow oven with a cheap cut of pork (or beef). Mine replaces the meat with vegetables and sometimes some spice.
For those that could not do without their meat, I cooked a few sausages on the side !!!!
