The "Boulangerie des Anciennes Arènes", in the Quarter Saint Jacques, Béziers - this keaps them at a controled temperature for a very slow "rise" of about five hours, which is the secret of the "proper" Baguette. Many bakers now "cut corners" !!!!!!
