Omelette de la mère Poulard
Annette Boutiaut (1851-1931), married Victor Poulard on January 14, 1873 and founded the Hostellerie de la Tête d'Or, on the Island of Mont Saint Michele off the coast of Normandy. Finding that customers came and went quickly with the tide, she created these giant omelettes, several inches thick, made, in hand-hammered copper bowls, and cooked over an open fire. The omelettes resemble a soufflé more than a traditional omelette
